Breakfast Bars

I like recipes that are simple. Breakfast bars are popular on blogs and this is my version . . .

2 ripe bananas (frozen and thawed)

2 cups mixed nuts and seeds. (I may grind them if I have big one, and I always roast them first)

1 cup mixed grains (Oats, millet, barley flakes, etc. Whatever I have on hand)

1/2 cup unsweetened, dried coconut

Dark chocolate to grate on top

2 eggs


  1. Preheat oven to 350
  2. Mix dry ingredients
  3. Add eggs and mix well.
  4. Pour into a greased pie plate, sprinkle with cinnamon, and grate with chocolate
  5. Bake 30 minutes or until cool.

These are very dense and filling. BK has requested that I use more chocolate on top and start adding honey to give them a chewier texture – I’ll upate this once I get around to trying that!=
