Pizza Suggestions

We eat pizza every week and to make it easy I keep a stock of homemade shells in the freezer.

Here are some of the best combos that we’ve tried

Peppercini and Black Olive

  • 1 can tomato paste
  • dried basil
  • Thinly sliced onions
  • 1 can artichokes, drained and quartered
  • 1 can sliced black olives
  • Peppercinis (we slice them and remove the seeds so they aren’t too spicy)
  • Feta Cheese
  • Portabello mushrooms (sliced and, if there’s time, I’ll sweat them on a frying pan first. This stops them from losing all of their water on the pizza and making it soggy)

Garlic Spinach and Feta

  • Fresh spinach, marinaded in olive oil with garlic for at least one day and then finely choppped
  • Feta

Artichoke, Goat Cheese, Tomato and Onion

  • Thinly sliced onions
  • 1 can artichokes, drained and quartered
  • 2 sliced tomatoes
  • 1 sweet red pepper, roasted and sliced
  • 1/4 cup fresh basil or 2 tspdried
  • 1 oz crumbled goat cheese
  • pinch of red pepper flakes
  • Mozerella cheese.
