Santa Fe Chicken

Marinade

Juice from 3 limes

1/4 cup soy sauce

1 1/2 tsp olive oil

1 1/2 tsp chili powder

1 1/2 tsp cumin seeds

1 1/2 tsp ground coriander

6 garlic cloves, minced

1 1/2 tsp honey

Chicken

2 whole chicken breasts

1/4 cup white wine

3 tbsp chopped cilantro leaves

  1. Mix marinade ingredients and cover chicken in a dish. Marinade at least 1 hour.
  2. Add white wine and broil for 8-10 minutes. Continue basting with marinade to keep moist
  3. Top with cilantro leaves.

This would be a great start to a Santa Fe Chicken salad like at Earls. It would also need – lettuce, tomatoes, salsa, plain yogurt, black beans, corn, chopped dates, corn chips, and sliced avacado.
